Thanks for all the suggestions on a "sample room." I'm going with the idea that it was some type of drinking establishment, perhaps even associated with the apparent brewery this gentleman had at some point in time.
Found a very interesting mechanics lien for the proprietor of the sample room when he and his partner didn't pay completely for the beer cave they had built in the 1860s.
